Halloween

happy halloween



hey guys! so as you know its Halloween tomorrow ,the 31st of October. Such a fun time of year where we all like to dress up , eat candy and drink alcoholic fruit punch (big kids only) ! us adults like to let our hair down once in a while too you know :P
so whatever your doing this Halloween. have fun , stay SAFE. & more importantly

Pumpkin soup

ingredients

8 cups chopped fresh pumpkin (about 3 pounds)
4 cups chicken broth
3 small tart apples, peeled and chopped
1 medium onion, chopped
2 tablespoons lemon juice
2 teaspoons minced fresh gingerroot
2 garlic cloves, minced
1/2 teaspoon salt
TOASTED PUMPKIN SEEDS:
1/2 cup fresh pumpkin seeds
1 teaspoon canola oil
1/8 teaspoon salt

Directions

In a 5-qt. slow cooker, combine the first eight ingredients. Cover and cook on low for 8-10 hours or until pumpkin and apples are tender.
Meanwhile, toss pumpkin seeds with oil and salt. Spread onto a baking pan ungreased. Bake at 250° for 45-50 minutes or until golden brown. Set aside.
Cool soup slightly; process in batches in a blender. Transfer to a large saucepan; heat through. Garnish with toasted pumpkin seeds.

One serving (1 cup) equals 102 calories, 2 g fat (trace saturated fat), 0 cholesterol, 567 mg sodium, 22 g carbohydrate, 3 g fiber, 3 g protein. Diabetic Exchanges: 1 starch, 1/2 fruit.

Pumpkin Pancakes - Ingredients 
  1. 1-1/2 cups all-purpose flour
  2. 1/2 cup whole wheat flour
  3. 2 tablespoons brown sugar
  4. 2 teaspoons baking powder
  5. 1 teaspoon ground cinnamon
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon ground ginger
  8. 1/2 teaspoon ground nutmeg
  9. 2 cups fat-free milk
  10. 1/2 cup canned pumpkin
  11. 1 egg white, lightly beaten
  12. 2 tablespoons canola oil

Directions

In a large bowl, combine the first eight ingredients. In a small bowl, combine the milk, pumpkin, egg white and oil; stir into dry ingredients just until moistened. Pour batter by 1/4 cupful's onto a hot griddle coated with cooking spray; turn when bubbles form on top. Cook until second side is golden brown.

 pancakes equals 240 calories, 5 g fat (1 g saturated fat), 1 mg cholesterol, 375 mg sodium,
